Dried Cranberry, Cucumber & Exotic Tomato Salad

Great weather, calls for the great outdoors and there’s nothing as refreshing and relaxing as a family picnic. Chef Mynhardt shares another snackalicious recipe with us that is quick and easy, but leave you looking like a pro. This cranberry, cucumber and exotic tomato picnic salad with roasted and salted macadamia and naartjie dressing is simply delicious - sunshine in a bottle!.

Easy to make



1. 1 Medium sized cucumber, sliced into spaghetti
2. 1 packet of exotic tomatoes, halved
3. 2 wheels of any feta of your choice
4100g Montagu dried cranberries 


1. 100ml Red wine vinegar
2. 300ml Extra virgin olive oil
3. Salt and pepper to taste
4. 5ml Dijon mustard
5. 5ml Sugar
6. Zest and juice of 1 nartjie
750g Montagu roasted and salted macadamia nuts 


1. Take 4 medium-sized jars and layer the salad inside starting with the cucumber, then the tomatoes, crumbled feta and the cranberries.
2. Place the salads in the fridge until you are ready to leave for your picnic.


1. Place all the ingredients in a blender and blend until smooth.
2. Pour the dressing in a glass bottle and place in the fridge until you are ready to leave on your picnic.
