Nuts and Seeds Rusks
This Nuts and Seeds Rusks are easy to make and filled with all the goodness of seeds, almonds and other tree nuts.
It is the perfect coffee companion to start your day or to just silence that mid-morning tummy growls!

INGREDIENTS
1kg Good quality Wheat Self-raising flour
5ml Salt
200ml Brown Sugar
125ml coconut flakes
325ml margarine
2 x large eggs
350ml buttermilk
Montagu Seeds and nuts - To taste. We used the Montagu Heart Friendly mix.
Optional: Extra Cranberries

Method
1. Mix flour, salt, sugar and coconut.
2. Mix margarine into the flour mixture.
3. Mix egg, buttermilk, seeds and nuts. Mix into flour mixture.
4. Make round balls and pack neatly into a baking dish.
5. Bake for 1 hour at 180°C.
Take out of the oven and break or cut it neatly into rusk sized pieces.
6. Let it dry in the oven for 4 to 5 hours at 100°C or leave overnight at 50°C.
