Christmas Fruit Bars

1. 2 packs Tennis biscuits
2. 1 cup (250g) butter
3. 3 eggs, beaten
4. Pinch of salt
5. 5ml Mixed spice (cinnamon, nutmeg and all spice)
6. 1 cup (250ml) brown sugar 7.
7. 2 cups (500ml) Montagu Dried Fruit Cake Mix

Method
1. Arrange some of the biscuits in a 30cm x 30cm baking tray and grind the rest in a food processor.
2. Place the butter, spices, sugar, salt and Montagu dried fruit cake mix in a saucepan and bring to a boil.
3. Lower the heat and stir in the eggs quickly.
4. Cook for another 5 minutes on a low heat.
5. Add the ground biscuits and mix through.
6. Pour the mix over the biscuits in the tray and let cool.
7. Once cooled, cut into bars and decorate with the red glitter.
