Pecan & Date Fudge with Gold Dust

FUDGE is said to be an American invention. People say that the first batch of fudge was an accidental “fudged” batch of caramels - hence the name Fudge. Today we thank the guy (or girl) who Fudged the caramels recipe to give us this amazing invention! Who’s with us?

Ingredients

  1. 1 tin Condensed milk
  2. 450ml Castor sugar
  3. 225g Butter
  4.  5ml Vanilla extract
  5. 100g Montagu whole pecan nuts , chopped
  6. 100g Montagu pitted Sayer dates , chopped
  7. Some gold glitter for garnish

Method

  1. Place the condensed milk, castor sugar and butter in a microwave-safe bowl.
  2. Microwave on high for approx. 15 minutes stirring every 3 minutes. It should be a golden caramel colour.
  3. Quickly add the vanilla, pecans and dates and mix through.
  4. Pour into a prepared baking tray and let it cool for 10 minutes.
  5. Cut into squares and cool completely.
  6. Dust with golden glitter before serving.
