Herb and almond pesto bread with tomato roasted chicken

Picnic herb and Montagu almond pesto bread served with roasted tomato chicken pieces, Montagu chilli beef sticks, Immune Booster mix, Heart Friendly mix and Low GI mix.

Ingredients: Herb and almond pesto bread

  • 1kg Cake flour
  • 10g (1 sachet) Instant dry yeast
  • 1/4 Cup brown sugar
  • 15ml Salt
  • 200ml + 450ml Warm water
  • 80g Soft herbs such as parsley, basil and coriander
  • 100g Montagu roasted and salted almonds
  • 50g Parmesan cheese, grated
  • 2 Garlic cloves, peeled and minced
  • Zest and juice of 1 lemon
  • 250ml Extra virgin olive oil
  • Salt and pepper to taste

Ingredients: Tomato roasted chicken pieces

  • 1,5kg Free range chicken drumsticks and thighs
  • 2 Cups Tomato ketchup
  • 30ml Garlic salt

Method: Herb and almond pesto bread

  • Place the flour, sugar and salt in a stand mixer with a dough hook.
  • Mix the yeast with 200ml warm water and let it foam.
  • At a low speed, add the yeast water and 450ml water and let the dough knead for 8-10 minutes or until smooth and elastic.
  • Place the dough in an oiled bowl, cover and let it rise for about 1 hour.
  • Place the herbs, almonds, parmesan, garlic, lemon zest and juice, olive oil and seasoning in a food processor and blend until smooth. Keep aside.
  • Once the dough has risen, roll out on a work surface and spread the pesto on it.
  • Fold closed like an envelope and cut 3 slits into the dough, keeping the top intact.
  • Plait the dough and place the whole bread on a prepared baking tray. You can also make smaller plaited breads.
  • Let it rise for another 10 minutes and bake for 40-45 minutes or until well risen out and golden brown.

Method: Tomato roasted chicken pieces

  1. Mix the tomato ketchup and garlic salt together and mix through the chicken pieces.
  2. Place the chicken in an oven dish and bake for 40-45 minutes or until browned and cooked.
  3. Cool down and take with on your picnic.
