CINNAMON & DATE GRANOLA

Thank you, Teresa, from Cupcakes and Couscous for this easy home-made Granola recipe! Perfect for the new season.

 

Makes approximately 550g/4½ cups.

Ingredients:

240g (2 cups) rolled oats
10ml (2 tsp) cinnamon
100g (1 cup) Montagu pecan nuts, roughly chopped
100g (½ cup) Montagu pumpkin seeds
12 Montagu pitted dates, roughly chopped
45ml (3 tbsp) honey
45ml (3 tbsp) coconut oil
30ml (2 tbsp) warm water

Montagu Banana Chips or Mango Bites, to serve

Method:

  • Preheat the oven to 150ºC and lightly grease a large baking sheet.
  • Combine the oats, cinnamon, pecan nuts, pumpkin seeds and dates in a bowl.
  • Gently heat the honey and coconut oil together in the microwave or on the stove until melted. Add the water.
  • Pour the honey mixture into the dry ingredients and mix well. Tip the mixture onto the tray and spread into an even layer.
  • Bake for 15 minutes. Remove the tray from the oven and toss the granola. Return the tray to the oven for a further 15 minutes.
  • Set the granola aside to cool completely. Store in an airtight container and serve topped with yoghurt or milk and a sprinkling of banana chips or mango bites.
