Crunchies
These chewy crunchies are perfect for lunch boxes and snack time for boosting the immune system and energy levels. It is easy to make and great to get the kids baking!
Makes 20 crunchies
Ingredients:
- 1 cup oats
- ½ cup flour
- ½ cup desiccated coconut
- ¾ cup Immune Mix or Montagu Mix
- 150g butter
- 2 tbsp golden syrup
- ½ cup brown sugar
- ½ tsp bicarb
- 50g carob chunks
Method:
1.) Preheat your oven to 180°C. Grease a 20cm square brownie tin and line the base with baking paper.
2.) Place the oats, flour, coconut and Immune Mix in a bowl and mix to combine.
3.) Place the butter, syrup and sugar in a small saucepan. Stir over low heat until the butter has melted and everything is combined. Once the butter starts to bubble remove the saucepan from the heat and stir in the bicarb.
4.) Pour the butter mixture into the dry ingredients. Mix well until everything is combined. Pour the mixture into the prepared tin and gently flatten into an even layer.
5.) Bake the crunchies for 20 minutes. Allow cooling before removing from the tin and cutting into squares.
6.) Melt the carob in the microwave and use a spoon or small piping bag to drizzle over the cool crunchies. Leave to set before serving.
