Crumpets, Nuts and Berries

 Thank you Ate Kitchen for this amazing recipe. Perfect to make Mother's Day   extra special this year! Spoil mom with delicious crumpets shaped into the   letters  M-O-M, topped with roasted nuts in honey, fresh raspberries and dots of   mascarpone. 


  • Butter 2 tablespoons
  • Milk 2 tablespoons
  • Water 2 tablespoons
  • Sugar 2 tablespoons
  • Egg 1 large
  • Flour 3 heaped tablespoons
  • Baking Powder 2 teaspoons
  • Mascarpone to taste
  • Raspberries to taste
  • Honey 4 tablespoons
  • Montagu Pistachios 2 tablespoons
  • Montagu Almonds  2 tablespoons
  • Montagu Hazelnuts  2 tablespoons


Put butter, milk and water in a saucepan and bring to the boil. Beat the egg and sugar, adding the boiled mixture and flour, beating until smooth. Add the baking powder and mixture with a spoon.
Place the mixture in a squeeze bottle and create letters on a hot frying pan. Frying each side until golden.
Heat the honey until it’s bubbling and add the nuts, spoon over the crumpets. Serve with raspberries and dollops of mascarpone.
